So eating out all the time can get so expensive so its nice to have a cheapy option too! 

Morrisons has been selling their glorious skinny soups for £1 recently and with half a bowl a soup a day your lunch is costing 50p!! 

The Goan tomato and lentil soup is like a curried soup in a bowl. Its lush! 
Spiced with cumin, chilli and paprika it gives you that winter warming feeling. 

Did I mention its only 1.3% fat! 

With so many different flavours to try its real value for money.

Skinnier naughty foods- 1) Lasagne


Cost:            Average £5 for 2/3 portions



Why is this healthier than a normal lasagne you ask?
  1. Use lean steak mince
  2. Use all fresh ingredients- put away the pre made dolmio sauce and use fresh chopped tomato and ½ fat crème fraiche
  3. Use half fat cheese- Sprinkle a small amount on the top of your pasta for a crispy topping.

 Ingredients:   

  • Lasagne sheets
  • 500g lean steak Mince
  • 300g ½ fat Crème Fraiche
  • Lighter cheese-approximately a small handful
  • 600g chopped tomato
  • ½ an onion
  • 2 mushrooms
  • A handful or spinach
  • 2 cloves of crushed Garlic
  • ½ tbsp Worchester sauce
  • Sprinkle of chilli flakes for a kick
  • 1 tsp tomato puree
  • Italian herbs (basil, thyme, parsley)
  • Salt and Pepper to taste

Method:

Preheat oven to 200°C
In a saucepan pour in 1 tbsp of olive oil and add garlic, tomato puree and onion and cook until soft then add mince to brown. Once brown, drain excess grease. Add in mushroom (and if you feel adventurous you can add chorizo or pancetta here if you prefer a meatier lasagne)

Add tomatoes, Worchester sauce, salt, pepper, chilli flakes and herbs.  Taste and add more seasoning if needed. Add spinach and allow to simmer for approximately 5 minutes.

Add crème fraiche and tbsp of water to a small saucepan. Stir continuously. Add cheese a small amount at a time and mix in. Add more water if sauce becomes too thick. How much cheese you add is your preference the smaller amount you add the healthier it will be.

Pile it up in an oven proof dish

 Put in the oven for 45- 60 minutes. Serve with salad garnish to break down the flavours. 
Then eat and enjoy!!
